Look closely at the head and you can see that many seed pods have given up their contents, but more are about to pop out, and are in the process of doing so. What a wonderful thing is mother nature.

Beautiful capture, nice and crisp! I believe your looking at the pollination stage here, and those are pestils and stamens in the center. The seeds can be found in the dried flower heads:) Thanks for helping me to identify the hollyhock, in my Genk album!
